Beneath its surface, the flesh starts off as dense, firm, and vibrant golden orange when the Hachiya persimmon is unripe, featuring a high tannin content that imparts an astringent, unappealing taste. As the fruit progresses towards maturity, the tannins gradually break down within the flesh, leading to a transformation into a gel-like, watery, and soft texture, along with an increase in sweetness. When fully ripe, Hachiya persimmons are incredibly soft, delicate, and squishy, resembling the consistency of a water balloon when gently squeezed. These ripe fruits also boast a sweetness akin to honey, complemented by subtle hints of brown sugar, cinnamon, mango, and apricot.
